This is one of the more popular sweet soup among the Chinese and very easy to prepare. Red beans are high in vitamin B and it is good for beriberi patients. Red bean sweet soup with preserved tangerine peel is used by the Chinese to drive away ‘dampness’. Elderly previously suffering from swelling feet as the result of water retention can take congee with red beans regularly to prevent symptoms from recurring.
400gm red beans (washed)
2 pec sliced sugar (片糖)
1 pc tangerine peel (washed)
3 pcs screwpine leaves - daun pandan (washed)
1. Place washed red beans in a slow cooker
2. Add in screwpine leaves and tangerine peel
3. Set temp. to low and let it boil through the night
4. Next morning add in the 2 pcs of sliced sugar and stir until dissolved.
